Sea Captain’s Recipe: Shrimp and Grits
Makes 4 Portions:
Ingredients:
48 Medium Shrimp (40/50 count per pound) peeled and deveined
½ cup celery, diced
½ cup onion, diced
½ cup cooked bacon, chopped
1 cup heavy cream
Salt and black pepper
¼ cup cooking oil or clarified butter
6 cups cooked and seasoned grits
Directions:
Bring a large frying pan to medium-high heat. Put in the cooking oil or butter. Immediately add the shrimp, celery, and onion. Stir frequently for two minutes or until the shrimp are almost done. Add the cream; continue to stir while cream reduces to ¾ cup. Add the bacon, season with salt and pepper. In serving bowls, place 1 ½ cups of the cooked grits. Divide the shrimp mixture into each bowl. Dig in!
